Spicy Bread Upma
Bread Upma is a spicy yet healthy item for lunch, which is basically used to prepare in the southern part of Indian or some Asian countries. To make this item you need, 3 cups chopped bread cubes, 2 tbsp olive, 1 tbsp mustard seeds, 1 finely chopped onion, 1 finely chopped green chili, 1 tbsp chopped ginger, 6 curry leaves, 2 medium sized tomatoes that are finely chopped as well and 1 tbsp chopped coriander leaves along with salt, red chili powder and a pinch of hing or asafetida.
Heat the oil in a frying pan and pour the mustard seeds into the oil, then add chopped onion-ginger-leaves into that oil, toss until they turn transparent into light brown. Then add tomatoes into the mix and toss for 10 to 12 second until tomatoes get soften. Then, add the all spices one by one and after a while pour the bread slices into that mix. After the bread pieces turn crispy, off the gas and pour into the lunch box with some extra coriander leaves.
You can try this recipe with other ingredients like semolina, rice, etc.
